I’ve been trying tons of pre-made keto foods. To be honest, most are disgusting!! I just can’t stand the artificial sugar flavors, the bland textures and the overly salty finish.
I love cereal, cereal is my number 1 comfort food. Oatmeal, Raisin Bran, peanut butter captain crunch, Golden Grahams. Sign me up. Except, this whole crazy keto thing is working! I’ve been using the keto diet to improve my heath since April, and it’s working! I feel amazing.
I plan to eat this way for the rest of my life. There, I said it. I don’t plan to ever get off the keto diet, my labs have been amazing, my body when I don’t cheat is a glorious machine, and my brain is clear. I have also been doing fasts, both intermittent and up to 72 hours. I have been supplementing my 72 hour fasts with salty bone broth to keep my electrolytes up but I feel good. Don’t get my wrong, I’m still a over weight, ultra busy, mother to 4 hyper little humans so I do get tired, I do get irritable but it’s less. I also haven’t had a Lupus flare in 3 months. I’m not completely symptom free, but I am no longer staying in bed for days at a time and only doing the bare minimum due to the pain and brain fog.
I also get cravings. Mostly for my favorite comfort foods. I know to not do it, that’s it’s not worth it. That doesn’t make them vanish though. So I have been messing around with keto approved ingredients and mimicking the flavor and texture of these foods.
Cereal killer – craving crusher
1/2 cup hemp hearts
2 tbsp flax seed (whole or crushed what ever you can find, it’s just to mimic the crunch)
2 tbsp of a sugar substitute (I use Sola, but you know how your sugar substitute adds up to sugar, if you only use pure stevia 1 doonk may be enough, but truvia is very similar in sweetness)
1/2 tsp cinnamon
2-4 tbsp heavy cream (you can also use full fat coconut cream, or what ever your favorite coffee creamer/milk replacement is) enough to wet the ingredients to mimic the milky texture you get when eating cereal. You don’t need a ton because it doesn’t get absorbed into anything and I personally hate chasing cereal around the bowl.
Directions: add all dry ingredients to a mixing bowl and stir well. Put a frying pan on the stove top and heat it to medium. Once it’s warm dump the cereal mixture in the pan and start stirring. You’re just toasting the hemp hearts and combining the flavors. It doesn’t have to get super brown just toasty. Turn off the heat, keep stirring and then dump back into the mixing bowl. Let cool and move to a cereal bowl (or eat out of the mixing bowl) pour over the heavy cream and stir. I love it with pumpkin seeds added to the top and a sprinkle of Pink salt. This will keep well in the fridge for up to a week. It starts to get a little moist if you leave it longer than that. Enjoy!
Additional add ins – Peanut butter fit powder + butter, choconite powder in place of the sweetener, pumpkin spice in place of the cinnamon, egg nog extract in place of the cinnamon, banana extract in addition to the cinnamon (I liked 1/4 tsp, not too strong and I didn’t have a reaction to the propylene glycol in the extract), vanilla extract in place of the cinnamon.
